“Why limit HAPPY to just an HOUR?”

It was an epic Girl’s Foodie night for SURE and the happy times… they far outlasted an hour!

I love love love having friends over for dining and entertainment. Girl’s nights are especially lovely and I totally get in my groove with candles, flowers, the perfect playlist of music, and of course… the most spectacular menu for everyone’s enjoyment!

A variety of ladies came to my place for a “feast before the flurries” that Nashville has routinely given us these last several weeks. #ImOVERit – Just in case anyone was wondering. The only place I want to see new flakes of white is on a ski slope in the rockies!

The Nurse – Megan Marie was out of nursing school early yesterday and helped me prep food and clean!

The Producer – LOREN has been a fast friend! Love following all her big moves in the world of film production!

The Artist – Tinsley has also become my hiking buddy over the last year… #mustlovedogs 🙂

The Host – Hannah has been on some radio interviews with me over the last 1/2 year.

The Sales Gal – “TINA” is reppin’ that Pharma all over TN!

MY TABLE:

New table top arrangement – #DVF lacquer tray with assorted crystal candle sticks I have collected over many trips to TJMaxx and Homegoods, metallic candles, and newly painted #antlers – I love white statement pieces and accents.

MY MENU:

I decided to make an effort toward spring with a champagne cocktail… Trader Joe’s had some blueberries on sale, so I did a blueberry, basil, Meyer lemon combo that turned out to be lovely! In the summer, you can freeze your berries to keep the bevy chilled just right!

And a very HAPPPPPPPPYYYYY BDAY to my friend, Jess!!! Happy we could kick off your celebration of the BIG #28! Praying this is your best year yet! SO thrilled you are my friend and in my #NASHVILLE world! Love you lots!

I made a Root Veggie Salad the other night for another dinner party that was way YUM, so I made it again!

  • 1 bag of Trader Joe’s lentils (pre-cooked / chilled)
  • 6 small OR 3 large beets (roasted in EVOO & sea salt / chopped or cubed / chilled)
  • 2 large sweet potatoes (roasted with EVOO & cinnamon / chopped or cubed / chilled)
  • 1/4 red onion (finely chopped)
  • fresh ground pepper
  • In a separate bowl: TJ’s Feta Cheese (crumbled / drain the Brine) & add chopped Mint for garnish.

Peppercorn Pork Tenderloin is one of my favorite dinner party items… It’s easy to cook and attractive to plate and serve to a larger party. Just add a little EVOO, wrap in tinfoil, and Bake @400* F for about 30-40 minutes. Last night I added a side of pureed Pesto to garnish since I didn’t have any horseradish or dijon and it was great!

Brussel Sprouts are one of my all time favorite foods. Definitely.

I had “TINA” chop and quarter them for me last night during food prep.

  • In a pan, caramelize 1/2 red onion, pancetta, 3 cloves garlic (chopped), EVOO, salt & pepper.
  • Add the Sprouts and smoked Paprika for an awesome “rich charr-grilled taste”
  • Then place all from the pan on a baking sheet and broil on HI for 6-8 minutes till leaves are crispy.

I would say BRUSSELS & BEETS are in my top 4 along with BANANAS, & BACON. Yes, all with B’s. That is not lost on me.

For dessert I served a tiny scoop of double dark chocolate Talenti Gelato with a Speculoos cinnamon spiced cookie.
